Steak on the Go

Roll-up, bundle, pinwheel, finger steak, steak on the go....wasn't really sure what to call these so feel free to pick whatever name you like because once you try this easy meal you will most certainly be enjoying it again, and again and again.

Pepper Steak On the Go
Thinly sliced steak or sandwich steaks
WF Thick and Spicy Sauce
Salt/Pepper
Thinly sliced peppers and onions
Toothpicks

Dredge the steaks in the Walden Farms BBQ Sauce, season with salt and pepper then fill with the veggies.  Roll and secure with toothpicks.  Grill until delicious.  

Feldman Ranch Cooking Tip - The steak cooks fast so we prefer to sauteed the peppers and onions so they are not raw.

Italian Steak Pinwheels 
Thinly sliced steaks
Cream Cheese
Italian Seasoning
Spinach Leaves
Favorite Steak Seasonings
Toothpicks

Add the desired amount of Italian seasoning to the cream cheese and stir until smooth and easy to spread.  Season your steaks with your favorite steak seasonings.  Spread a generous amount of the cream cheese mixture the length of the steak then cover with a layer of spinach leaves.  Starting at one end roll the steaks securing with a toothpick.  Grill until delicious.  These may take a bit longer depending on how you like your steaks prepared and the time it takes to cook all the way to the middle of the pinwheel.

Because sometimes life is SWEET.....

I know, I know....this is a clean eating blog but sometimes you're asked to make cookies and if you are going to make cookies then they better be so sweet to look at that you just have to share.  Plus, I have a few friends that have children that are always happy to see if I have included an "Emily version" or they have commented "Did you get this recipe from Colene?" with a roll of an eye. So, here is to the sweet tooth and starting fresh tomorrow!

These cookies are more about baking quick and making it pretty and less from scratch as they start with a Betty Crocker cookie mix and end with candy straight out of Dollar General's candy isle, but they are fresh from the oven and the kids will undoubtedly be impressed.

Feldman's Ranch Version of 
Insomnia's Peanut Butter Cup Cookie
Betty Crocker Peanut Butter Cookie Mix
Peanut Butter Chips
Milk Chocolate Chips
Reese's Mini Peanut Butter Cups
Reese's Pieces

Make and bake cookies according to package directions.  Remove from the oven and add the toppings pressing slightly to adhere to the cookie.

Oh So Chocolately Chocolate Chips Cookies

Betty Crocker Chocolate Chip Cookie Mix
Chocolate Bark
Mini M&Ms

Make and bake cookies according to package.  Let completely cool.  Melt bark then dip the cookie.  Sprinkle with mini M&Ms to decorate.

Feldman Cooking Tip

To get a nice round cookie use a 3 tablespoon scoop to create the cookie ball then using fork press the ball into a flat circle. Perfect cookie every time.

Wednesday Night = Pizza Night

Wednesday Night with the Feldman's is Pizza Night!  This fun came about as it is the only night during the school year that I can guarantee that we will all sit around a table at a "normal" dining hour and enjoy each others company. Although, it has become a bit of an inside joke with the family as they all understand that there is now a certain glare that comes along with making alternative plans on Wednesday evenings and on more than one occasion the girls have had to use the excuse "it's pizza night" to avoid the glare down with mama.  The summer air and the beauty of our backyard has given us the opportunity to mix things up by adding wine to our Wednesday Pizza Night.  I haven't tried it but I think that our go to, Godfather's Pizza, would frown on us uncorking a bottle in their dining room so until the leaves turn we bid Godfather's an adieu.


Grilled Tortilla Pizza
Low Carb Tortilla
Olive Oil
Garlic
Italian Seasoning/Cracked Red Pepper
Favorite Pizza Toppings
Favorite Mix of Cheeses

Infuse the olive oil with the garlic and seasonings.  Brush one side of the tortilla with this oil infusion.  Place brushed side down on grill then apply the olive oil mixture to the other side of tortilla.  Once crisp, flip tortilla and add topping to crisped side while the other side has it's turn on the grill.  This particular evening we used the smallest of browned turkey meatballs, red onion, spinach leaves and a mixture of shredded Parmesan and mozzarella. Continue to grill until both sides are crispy and look delicious. 

Pair this with a meat and cheese tray and you have yourself a satisfying Wednesday Pizza Night!
