Fajita Chicken Stuffed Portabello Mushrooms

We love our mexican food and enjoy taking simple recipes and turning them into our next favorite mexican meal. Portabella mushrooms are a great replacement for buns and shells and are very filling.


Fajita Chicken Stuffed Portabello Mushrooms
Chicken
Portabello Mushrooms
1 can Rotel
Assorted Pepper Slices/Onion Slices
Spinach
Jalapeno Peppers
Shredded Cheese

Cook and shred chicken , add the can of Rotel to the chicken.  Saute the pepper and onion slices.  Clean the mushrooms and using a spoon remove the gills.  Cook until tender in a 400 degree oven.  Remove and stuff with the remaining ingredients.  Top with cheese and put back into oven to melt.






Feldman Quick Tips

Use your crockpot to cook the chicken.  You can start it in the morning and the chicken will fall apart when your ready to make supper.  

 

Cheddar Cheese Chips

Another low carb junk food recipe.  Gary came across these chips and they have totally replaced corn chips and tostada shells for us.  They are easy to make and taste delicious.  We use the cheddar slices from Aldi's.  Quarter the slices if you are wanting chips.  Full slices make perfect tostada shells.  Bake at 400 degrees for 10-12 minutes.





Feldman Quick Tip

Gary loves to make these on the grill.  They cook much faster and have a bit more crunch to them.  BUT you need to watch them closely because they go from crunchy to burnt very quickly.



Peanut Butter Cookies

These are on our low carb junk food list and are wonderful.  They are only 3 simple ingredients but are, well not to over use the word but....wonderful.  

Peanut Butter Cookies
1 cup Peanut Butter
1 cup artificial sweetener
1 egg

That's it folks.  Mix VERY well and bake at 350 degrees for 12 minutes.

Add whip cream on top of the cookie to make it a real treat.

Parmesan Crusted Flounder

We do love our fish.  We picked up some flounder last week at Aldi's and made the most delicious Parmesan Crusted Flounder.  This recipe is easy and a keeper.


Parmesan Crusted Flounder
4 flounder or other white fish fillets
1/4 cup parmesan
1/8 cup butter
1 1/2 T Mayo
Chopped spinach
Lemon Pepper Seasoning to taste

Broil the fish for 3-4 minutes, which is long enough to mix up the parmesan topping.  Pull the fish from the oven and spread the mixture evenly between the four fillets and put back into the oven to broil for another 4-5 minutes.

We prefer tilapia but decided to pick up flounder during this weekly trip to Aldi's.  Any white fish will work with the recipe.

Country Style Mustard Mock Potato Salad

Cauliflower is my new favorite veggie and we eat LOTS of it.  Gary found and made this recipe and it quickly became one of our favorites.  I am skeptical of any recipe that says...but it taste just like the real thing.  We all know it doesn't taste like the real thing but when you have the mindset of clean eating it is not about trying to fool yourself into thinking you can keep your bad habits but more about liberating yourself to healthier options.  This salad does just that.




Country Style Mustard Mock Potato Salad
1 large head of cauliflower (about 4 cups) boiled for 6-8 minutes or until tender but not mushy
6-8 hard boiled eggs

Dressing
1 cup Mayonnaise
1 T yellow mustard
2 T artificial sweetener
1/4 tsp garlic powder
1/4 tsp celery seed








Feldman Quick Tips

Feel free to make this your own.  You can put red onion, chopped celery, white onion and you will still get a great end product.  My Emily is not a fan of celery so the celery seed gives the great flavor without the crunch...plus celery is not a staple in our house but the celery seed will keep. Plus, all measurements are estimates....I measure more by eye then by spoon and all works out well.

Broccoli Salad


One of our favorites year around is broccoli salad.  We are an Aldi family and purchase just about all of our produce, meat, cheese and eggs there.  If you haven't checked it out, grab your bags and go...you will be pleasantly surprised.

Do remember that recipes should always be used as inspiration and not a strict guideline.  Take what you like and add more or feel free to omit anything you do not like. Make it your own and enjoy.



Broccoli Salad
Two small heads of broccoli
Bacon
Red Onion
Sunflower Seeds

Dressing
Mayonnaise
1/2 cup your choice of artificial sweetener
Spash of white vinegar







Feldman Quick Tips

If you are like us, we LOVE bacon but can't stand the way the grease smell hangs in the house for days. So we use the box of already cooked bacon when whipping up this salad. Nuke it for about 1 minute then let it sit to crisp back up and crumble.

The Transition to a Clean Eating Lifestyle

Two years....Four months....1 year 8 months....1 day....not your business....

These are the answers to the questions that I have been asked since I started my journey to cleaning up our eating habits.  They have become more of a chant than conversation for me.  Numbers that ring through my head but really don't mean much to anyone else.  To be honest, I will admit that I have begun to dread the questions that provoke these numerical answers. But there is one question that I am very excited to talk about!  Exactly what do you eat!?  This usually comes out as a combination question/exclamation almost as if they expect me to burst into tears and yell...LETTUCE, I EAT LETTUCE!  Fortunately, I can tell you there are no tears...quite the contrary. Unfortunately, I am so excited about many of the recipes that I find myself unable to recall any of them when the question rises.  So, long story short I have decided to start a recipe blog posting the tried and true recipes that we have found during the many hours on Pinterest and are Feldman approved.

Before we are knee deep in recipes...You must prep.  I find that there is only one thing that can deter me from making a meal every night and that is having to prep along the way. Prep, prep, prep....can't say it enough.
